I’m back

Yup. For some reason about a week ago in some sort of crazy rage, I deleted my last blog by the same title. Retarded, I know. It used to be http://ivegan909.blogspot.com, in case anyone was wondering. Oh well. This blog will be so much better. So where shall we begin! Well, I’m at college at this very moment in time and totally unable to cook anything, so lets talk muffins! Why you ask? Because it was that last thing I baked. What kind of muffins you ask? Freaking amazing ones, that’s what kind. No seriously, they’re called Peanut Butter Oatmeal Muffins…from a recipe off of VegWeb. De. Lish. They are seriously easy…here’s the recipe:

  • 1 cup whole wheat flour
  • 1 1/2 teaspoon baking powder
  • 1 cup rolled oats
  • 3/4 cup soy milk
  • Ener-G Egg Replacer for 1 egg
  • 1/3 cup peanut butter
  • 1/3 cup maple syrup


In large bowl mix flour, baking powder and oats.

In a separate bowl combine milk, egg or Ener-G Egg Replacer, peanut margarine and maple syrup.  Add to the dry ingredients; stir just until moistened.

Spoon into prepared muffin tins.  Bake at 400 degrees F for 20 to 25 minutes.  Makes 12 muffins.


Super easy, yeah? Yeah. I used Better ‘n’ Peanut Butter instead of the real stuff. Has anyone else ever used it before? Well, if you’re a calorie-slashing freak like me, you should totally try it. It doesn’t taste exactly like peanut butter, but it’s close enough to satisfy (I just will eat a plain ol’ spoonful of it, if that says anything about it’s tastiness). Just to let you know. 😉
